Boiled Dinner (Ham or Corned Beef)

This can be made with a piece of ham or corned beef. If you use corned beef, wash it first as they are kind of yucky when you buy them! Place meat in a large pot and simmer for 2-3 hours. Don't add salt to either of these, if you are using corned beef you can use the spice they usually pack in with the meat. Remove meat from pot and strain broth. Chill broth overnight and skim any fat from it when you make the soup. Put the broth back in the large pot (you have of course washed it again!) and add the cooked meat, whole, peeled carrots, small peeled potatoes, and wedges of cabbage. Simmer gently until tender (about 30 minutes?) You must, of course, have homemade Soda Bread to eat with this.
