Kuchen (This is my adaptation of the recipe below this one.)

Dough:
1 pkgs. yeast
2 eggs plus water to make 2 to 2 1/4 cups (you may need  more water, I am tweaking!)
1 tsp. salt
1/4 c. sugar
1/4 c. instant potatoes
1/4 c. oil
6 c. flour
Make this in your bread machine, if you have one.  Let rise until doubled, punch down and let rise again.
Press dough into greased 9" round pans. You can use square or whatever!. Make the dough about 1/2" thick, you don't want the Kuchen to be all dough. This will make about 6 kuchens, 8oz. of dough each.

Layer in any kind of cooked fruit you want or a cottage cheese layer is also very German and very good.

Filling:
6 eggs
1 t. vanilla
4 T. flour
1 t. salt
2 c. sugar
4 c. cream or half and half
Beat all except cream until  light and fluffy and add cream. Mix well. Pour over kuchen dough and fruit in prepared pans. Sprinkle tops of Kuchen with cinnamon.
Bake at 350 degrees for about 35 to 50 minutes or until the centers seem done.

 

Kuchen (This recipe is from Helen Miller, Gramma's neighbor who knows how to cook!)

Dough:
2 pkgs. yeast
1/2 cup water
4 eggs
1 T. salt
2 c. sugar
4 c. warm water
1 1/2 c. instant potatoes
1 c. oil
16 c. flour (about)
Mix yeast and 1/2 c. water together and let soak while preparing rest of dough.
Beat eggs, salt and sugar. Add water, potatoes, oil and yeast mixture. Add enough flour to form a soft dough. Not sticky, but almost sticky. Let rise until doubled, punch down and let rise again.
Press dough into greased 9" round pans.

Layer in any kind of cooked fruit you want or a cottage cheese layer is also very German and very good.
